This combination of juicy watermelon, salty feta, fresh mint, hearty kale and tangy lime juice is what dreams are made of. I am currently OBSESSED! This would be great for brunch, lunch or dinner and pairs so nicely with anything grilled.
-3 Tbsp olive oil
-zest and juice of 1 lime
-3 Tbsp balsamic vinegar
-1 tsp salt
-1/2 tsp pepper
-1 tsp sugar or honey
-1 bunch kale, torn into bite sized pieces
-2 c watermelon, cut into small chuncks
-1/2 c feta cheese
-1 bunch mint, sliced into ribbons
In a medium serving bowl, whisk together olive oil through sugar/ honey. Toss mixture with the kale and mix well. Set aside for 20- 30 minutes. After the kale has sat, stir it again. Place a mound of watermelon in the center of the kale. Sprinkle with the feta. Then sprinkle the mint on top and serve.
