This slaw captures all the best things about Vietnamese food – it’s salty, complex, a touch sweet and complimented with a bunch of fresh herbs. Serve this Slaw with any Southeastern Asian-inspired meal or bring it to a potluck for a welcome twist on the classic mayo-based slaws.
To make this #dinnerdoneby9am I assemble the slaw in the morning without adding the peanuts, then I refrigerate all day and add the peanuts just before serving.
Slaw
-1 (16 oz) bag cole slaw mix
-3 green onions, sliced
-a handful each of basil, cilantro and mint, chopped
-1/4 c salted dry roasted peanuts, chopped
Dressing
-1/4 c rice vinegar
-juice of 1 lime
-2 Tbsp olive oil
-1 Tbsp fish sauce
-1 Tbsp chili garlic sauce
-1 Tbsp honey or sugar
-1/2 tsp salt
-1/4 tsp pepper
In a medium bowl, whisk together dressing ingredients, then add cole slaw mix and green onions giving everything a good toss. Add the chopped peanuts and fresh herbs toss lightly, then serve.
