Bowl meals have become all of the rage lately because they are a fun way to mix up a variety of flavors and textures. Guests also love to be able to pick their own ingredients and assemble their own bowl. We tend to prefer to fill up on protein and veggies in our house and limit the grains so these bowls are a way to enjoy our favorite Mexican flavors with minimal grains and heaviness.
There aren’t really any rules here, just lay out your choice of the items below and let guests build their own bowl.
–Slow Cooker or Pressure Cooker Mexican Chicken
–Slow Cooker or Pressure Cooker Carnitas
–Barbacoa Beef
–Mexican Street Corn
-black beans
-rice or cauliflower rice
-lettuce
–Black Bean and Corn Salad
–Pickled Red Onions
–Cilantro Lime Slaw
-store-bought or homemade Salsa
-store-bought or homemade Guacamole, or sliced avocado
-sour cream or Chipotle Lime Crema
-cilantro
-diced mango
-hot sauce
-cheese (cotija, queso fresco, or cheddar)
I like to build bowls by putting a bulk item on the bottom (like rice, cauliflower rice or lettuce for this bowl), then pile some meat on top, then choose 3-5 toppings, at least 1 of them being something pickled/briny, and then 1 or 2 sauces to squirt on top.
