I don’t like overly sweet cocktails, but I do like lots of flavor. The lemon and rosemary balance so perfectly in this light and refreshing cocktail. For easier entertaining, I like to make the simple syrup a day ahead, as well as squeeze the lemons, then I refrigerate everything and stir it all together when ready to serve.
Rosemary Simple Syrup
-1/2 c sugar
-1/2 c water
-a few sprigs of fresh rosemary
Rosemary Lemon Gin Fizz
-2 oz gin
-1/2 oz lemon juice
-1/2 oz simple syrup
-1 oz club soda
Make the simple syrup: place sugar, water and rosemary in a small pot and bring to a boil. Cool to room temperature, then strain and refrigerate until using (up to 2 weeks).
To make the cocktail: put a few ice cubes in a glass and add the cocktail ingredients. Stir well, garnish with a lemon wedge and/ or rosemary sprig and serve.
