This is one of our favorites.  It’s great on sandwiches, lettuce wraps, pita chips or even tossed with some cooked pasta.  

To make this #dinnerdoneby9am I fully assemble it in the morning, refrigerate all day and pull out in the evening to spread on sandwiches or serve over a bed of greens.

-2 c cooked chicken, shredded or diced
-1/3 c mayo or yogurt
-juice of 1/2 lemon
-1 Tbsp curry powder
-1 Tbsp sugar or honey
-1/2 tsp salt
-1/4 tsp pepper
-1/8 tsp cayenne
-1/2 c dried cranberries or diced red grapes
-2 stalks celery, diced
-1/4 c diced red onion or sliced scallions
-(optional) 1/4 c sliced almonds, chopped walnuts or pecans
-(optional) 2 Tbsp chopped cilantro

Whisk together mayo/ yogurt with lemon juice, curry powder, sugar/ honey, salt, pepper and cayenne.  Toss dressing with chicken and remaining ingredients.  Chill at least 1 hour prior to serving.
