This soup is simple, crowd pleasing and healthy. Serve with your favorite toppings from sliced avocado, hot sauce, lime wedges, chopped cilantro, shredded cheddar and/ or sour cream. To make this even more quick and easy you can use shredded meat from a rotisserie chicken, eliminate the step of cooking the chicken, and only cook the soup until warmed through and the flavors combine.

To make this #dinnerdoneby9am I throw everything through the chicken breasts in the slow cooker or pressure cooker, walk away until done, then finish the steps and refrigerate until serving.

(-1 Tbsp olive oil- pressure cooker version only)
-1 onion, diced
-4 cloves garlic, minced
-8 c chicken broth
-1 can diced tomatoes with green chiles
-1 (6 oz) can tomato paste
-1 (15 oz) can diced tomatoes
-2 cans black beans, drained and rinsed
-1 can white corn
-1 Tbsp sugar
-1 Tbsp chili powder
-1 tsp cumin
-1 tsp salt
-1/2 tsp black pepper
-3 boneless skinless chicken breasts
-3 Tbsp cornmeal mixed with equal parts water
-6 corn tortillas, cut into strips
-for serving: cilantro, diced avocado, lime wedges, sour cream, shredded cheese, hot sauce

Slow Cooker
In a greased slow cooker, stir together diced onion through black pepper. Add chicken breasts, spooning the rest of the mixture on top. Cook on low for 6-7 hours, until chicken shreds easily with 2 forks. Shred chicken, then stir in cornmeal mixed with water and cook an additional 30 minutes. Stir in tortilla strips and serve.

Pressure Cooker
Press saute button on pressure cooker and hit start. Add olive oil and onion to the pot. Cook, stirring constantly, 3 minutes. Add garlic, cook, stirring constantly, 1 additional minute. Add chicken broth through pepper, stir well. Add chicken breasts, turning to coat. Seal lid, select manual, high pressure, 25 minutes, and hit start. Once time is up, quick release pressure. Remove chicken and shred using two forks, then return to pot. Turn pot to saute, hit start. Stir in cornmeal/ water mixture and simmer 5 minutes, stirring intermittently. Turn pressure cooker off, stir in tortilla strips and serve.
