To make this #dinnerdoneby9am I drop everything in the slow cooker in the morning, turn off when done, and reheat prior to serving. 

-1 onion, diced
-1 red pepper, diced
-4 cloves garlic, minced
-3 bay leaves
-1 Tbsp cumin
-1 Tbsp oregano
-2 tsp salt
-1 tsp pepper
-2 chipotle peppers in adobo or 2 Tbsp chipotle hot sauce
-2 Tbsp liquid smoke
-1/2 c beef broth
-1/4 c lime juice
-4 Tbsp apple cider vinegar
-3 lb flank steak, brisket, or chuck roast, trimmed of fat and cut into 4 pieces

Combine onion through cider vinegar in a greased slow cooker, stir to combine. Add beef, spoon mixture over top. Cook on how 6-8 hours, until meat shreds easily with a fork. Serve with tortillas and desired toppings.
