Here I’ve taken all the flavors and toppings from our favorite BBQ Chicken Pizza, bulked them up a bit with some beans and corn, and packaged them in an easy, comforting soup.
To make this #dinnerdoneby9am I load everything in the slow cooker in the morning, then come back shred the chicken and serve once everything is done cooking.
-8 c chicken broth
-1 1/2 c BBQ sauce
-1 can chopped green chiles
-1 can white beans, rinsed
-1 can corn, drained
-2 chicken breasts
-assorted toppings: sliced jalapenos, shredded cheese, cilantro and red onion
In a greased slow cooker, combine the broth, BBQ sauce, green chiles, white beans, corn and chicken breasts. Cook on low for 8 hours or high for 4 hours. Shred chicken using 2 forks, then stir into soup and serve with you favorite toppings.
