I like to eat this plain from the bowl or on top of a bed of greens but it’s great on a sandwich, with crackers or stuffed in a tortilla wrap.

To make this #dinnerdoneby9am I assemble the salad, refrigerate all day, then pull out of the fridge when it’s time to serve.

-2 cups cooked chicken, diced or shredded
-1/3 c mayo or yogurt
-2 Tbsp soy sauce or tamari
-1-2 Tbsp sriracha, depending how spicy you want it
-1 Tbsp rice vinegar
-1/2 Tbsp honey or sugar
-2 scallions, sliced
-1 stalk celery, diced
-2 Tbsp chopped cilantro

Whisk together the mayo/yogurt, soy sauce, sriracha, rice vinegar and sugar/honey. Combine with remaining ingredients, mix and serve, or refrigerate until serving.
