To make this #dinnerdoneby9am I throw everything in the slow cooker in the morning, cook all day, and stir in vinegar just before serving.
-1/4 c flour
-2 c beef broth
-3 cloves garlic, minced
-2 Tbsp tomato paste
-4 Tbsp Worcestershire sauce
-1 tsp dried rosemary
-1 tsp dried thyme
-1 tsp salt
-1/2 tsp black pepper
-1 lb baby potatoes, halved
-6 carrots, peeled and cut into large chunks
-1 onion, sliced
-3 lb chuck roast
-2 (optional) Tbsp balsamic vinegar
In a greased slow cooker, whisk together flour and broth. Add garlic through black pepper. Add potatoes, carrots and onion, stir. Add chuck roast, spooning sauce over top. Cook on low for 8-10 hours, until meat shreds easily with 2 forks. If desired, stir in balsamic vinegar then serve.
