This is a super easy and healthy dinner. When I have time I’ll grill the chicken and make the homemade dressing but in a pinch on a busy day I’ll buy a rotisserie chicken and bottled dressing and throw this all together with minimal effort. Either way, it’s delicious! For gluten-free, make sure you use a gluten-free pasta option, I like Skinny Pasta. This recipe tends to make 2 salads that serve as a meal, or 4 side dish salads.

To make this #dinnerdoneby9am I cook the chicken in the morning and chop it, make the dressing and prep the tomatoes and lettuce. Then I refrigerate everything all day and toss it all together just before serving.

Salad
-2 chicken breasts, cooked and chopped
-12 oz desired pasta, cooked according to package directions
-2 heads romaine lettuce, washed and sliced
-1 c grape tomatoes, halved
-1/2 c shredded or shaved Parmesan cheese

Dressing
-1 clove garlic, minced
-1 c mayo or yogurt
-1/4 c lemon juice
-1/4 c white vinegar
-1 Tbsp Dijon mustard
-1 tsp Worcestershire sauce
-1/2 tsp salt
-1/2 tsp black pepper

In a food processor or blender, whirl dressing ingredients until well mixed. Spread desired amounts of salad ingredients between bowls, toss with desired amount of dressing and serve.
