Slow Cooker Pulled BBQ chicken is a picky-eater-pleasing, fuss-free way to feed a few or a crowd. Use any BBQ sauce you like, or try making this one that I like. Serve the Pulled Chicken on buns, or in baked sweet potatoes for a gluten free option, with extra sauce for topping and Cole Slaw for the side. You can easily double the recipe for serving a large group (as long as your slow cooker is big enough).
To make this #dinnerdoneby9am I put everything in the slow cooker in the morning, cook on low for 6 hours, then shred the meat and keep warm until serving.
-1 c BBQ sauce
-1 lb boneless, skinless chicken breasts
Pour BBQ sauce into the bottom of a greased slow cooker. Add chicken, turning to coat. Cook on low for 5-6 hours, until meat shreds easily with 2 forks. Shred meat in slow cooker using 2 forks. Add more sauce if desired. Set to warm for 30 minutes, then serve, or keep warm until serving.
