After weeks of trying to find a block of feta to make the TikTok pasta that was taking over everyone’s social media feeds I finally found one and experienced what all the hype was about. This dish is super easy, it basically comes together hands-free, in one pan and tastes delicious. I served it as a side with my Mediterranean Chicken, but it would also be great with cooked chicken or shrimp stirred into the dish. I made this with 2 packages of Skinny Pasta, which is low-carb, gluten-free and low-calorie, but you really could use any pasta of your choice.
-1/4 c, plus 1 Tbsp olive oil
-1 tsp Italian seasoning
-1/2 tsp salt
-1/4 tsp black pepper
-1/4 tsp red pepper flakes
-4 cloves garlic, peeled
-2 pints cherry or grape tomatoes
-1 (7 oz) block feta cheese
-1 box pasta shape of your choice
-(optional) fresh basil for garnish
In a large baking dish, stir together 1/4 c olive oil, Italian seasoning, salt, pepper, red pepper flakes, garlic and tomatoes, then spread out across dish so the tomatoes form a single layer. Make a whole in the center and place the block of feta in the center of the dish. Sprinkle feta with the remaining tablespoon of olive oil. Bake at 450 for 30 minutes, or until tomatoes have burst and tomatoes and feta and starting to brown. Mash everything up with a fork, squishing the tomatoes, feta and garlic, then stir in the pasta. If desired, top with fresh basil and serve immediately.
