This is an easy and effortless meal with an entire dinner baking together in one sheet pan. It is also a classic go to because it is one of the miracle dinners that all of my kids will eat.
-2 Tbsp olive oil
-2 tsp salt, divided
-1 tsp pepper, divided
-1 lb green beans, ends trimmed
-2 sweet potatoes, diced
-1 red onion, diced
-2 lbs chicken thighs (with skin and bones)
Line a baking sheet with foil and grease with a touch of oil. In a large bowl, stir together 2 Tbsp olive oil, 1 tsp salt and 1/2 tsp pepper. Add green beans, sweet potatoes and red onion and toss well. Peel the skin back from the chicken and season both sides of the chicken with 1 tsp salt salt and 1/2 tsp pepper, then fold the skin back over the chicken. Place the chicken skin side up on top of the vegetables and pat the chicken skin dry with paper towels. Bake at 500 for 50 minutes, then serve.
