These Buffalo Chicken Bites have the flavor of buffalo wings but without loads of fat like you’d find in a traditional wing. If you prefer to bread the chicken before baking, by all means, do so, but we like these on the light side, without any breading. You can use any hot sauce you have for this, but we’re partial to Frank’s because it has a really good balance of heat and vinegar.

-4 chicken breasts, cut into bite-sized pieces
-3 Tbsp olive oil
-1 tsp salt
-1/2 tsp pepper
-1 c hot sauce
-1 Tbsp apple cider vinegar
-1/2 tsp garlic powder
-4 Tbsp butter, sliced into pieces 1 cm thick

In a bowl, stir together olive oil, salt and pepper. Add chicken, stirring to coat. Place chicken on a greased baking sheet and bake at 450 for 15 minutes.

While chicken cooks, combine hot sauce, vinegar and garlic powder in a small pot and bring to a boil. Reduce heat, then add the butter, 1 piece at a time, whisking until each piece melts before adding another one. Once all of the butter had been added and melted turn heat to low to keep warm.

When chicken is cooked, toss with desired amount of buffalo sauce and serve immediately.
