-4 chicken breasts, cut into bite-sized pieces
-3 Tbsp canola or peanut oil
-1/2 tsp salt

Sauce
-1 cup chicken broth
-4 Tbsp soy sauce
-2 Tbsp sesame oil
-1 clove garlic, minced
-1/2 cup sugar or honey
-1 Tbsp chili garlic sauce
-2 Tbsp cornstarch mixed with 3 Tbsp water

In a bowl, stir together oil, salt and pepper. Add chicken, stirring to coat. Place chicken on a greased baking sheet and bake at 450 for 15 minutes.

While chicken cooks, in a small pot, whisk together sauce ingredients. Place pot over medium heat, simmer sauce 5 minutes, whisking intermittently. Turn heat down to low to keep warm until chicken is warm.

When chicken is done cooking, toss with sauce and serve over rice or cauliflower rice.
