Chicken topped with bacon, cheese and BBQ sauce! What’s not to love about this quick and easy sheet pan dinner? It’s easy enough for a weeknight yet delicious enough to serve to guests.
-3 chicken breasts sliced in half into cutlets
-1/2 tsp salt
-1/4 tsp pepper
-1/2 c BBQ sauce
-6 slices bacon or turkey bacon, cooked
-1/2 c shredded mozzarella cheese
-1/2 c shredded cheddar cheese
-chopped tomatoes and scallions for garnish
Please chicken on a greased baking sheet and sprinkle with salt and pepper. Spread 2 tablespoons BBQ sauce on top of each chicken cutlet. Bake at 425 for 20 minutes. Top each cutlet with a slice of bacon, sprinkle with approximately 1/6 of each cheese, then bake an additional 5 minutes, until cheese is melted. Garnish with tomatoes and scallions and serve.
