Serve this salad with crackers, on croissants, or in lettuce wraps for a light lunch or dinner.
-2 c cooked chicken, shredded
-1/3 c mayo or yogurt
-1 Tbsp dijon mustard
-juice of 1/2 lemon
-1 Tbsp honey
-1/4 tsp pepper
-1/2 tsp salt
-1 stalk celery, diced
-1/8 red onion, diced
-1/4 cup dried cranberries
-small handful of dried apricots, chopped
-1/4 sliced almonds
In medium bowl whisk together mayo, dijon mustard, lemon juice, honey, black pepper and salt. Add remaining ingredients. Serve immediately, or chill until serving.

I've never tried canned chicken, but I like your recipe so I think I'll give it a try. It would be nice to have chicken available in a can. Linda
