This soup has all the flavors of pizza packaged in a healthier meal that takes less than 30 total minutes to make. I like to use turkey sausage and turkey pepperoni to keep the soup a little lighter. Feel free to add some of your other favorite pizza toppings, I think bell peppers, black olives or mushrooms would all be great additions. Serve this soup with garlic bread or some freshly baked breadsticks.

To make this #dinnerdoneby9am I fully prepare the soup in the morning and refrigerate it all day before reheating just prior to serving.

-1 Tbsp olive oil
-1 lb Italian turkey sausage
-1 onion, diced
-4 cloves garlic, minced
-4 c chicken broth
-1/2 small package of pepperoni, sliced into quarters
-1 (15 oz) can petite diced tomatoes
-1 (15 oz) can tomato sauce
-1 (6 oz) can tomato paste
-1 Tbsp Italian Seasoning
-1/2 Tbsp sugar or honey
-1/2 tsp salt
-1/2 tsp pepper
-1/4 tsp red pepper flakes
-shredded mozzarella cheese for sprinkling on top of each bowl

Heat oil in a medium pot, over medium heat. Add sausage and onion, cook 10 minutes, breaking sausage up with a wooden spoon while cooking. Add garlic, cook 1 additional minute, stirring constantly. Add broth, pepperoni, diced tomatoes, tomato sauce, tomato paste, Italian Seasoning, sugar/honey, salt, pepper and red pepper flakes. Bring to a boil, reduce heat and simmer 10-20 minutes.

To serve, ladle soup into a bowl and top with shredded mozzarella cheese.
