This is a bright and healthy side dish that pairs well with a variety of meals. You could certainly use regular rice in place of the cauliflower rice in this dish, but I like to squeeze in extra vegetables when I can. To make this super quick and easy, I tend to use two bags of cooked frozen cauliflower rice for this recipe, but by all means, if you have the time, feel free to grate and cook a head of cauliflower on your own instead of using a packaged product.
To make this #dinnerdoneby9am you can fully assemble the dish in the morning, refrigerate all day, then bake at 350 for 20 minutes prior to serving.
-16 oz cauliflower rice, cooked
-1 (12 oz) package frozen spinach cooked and sqeezed of excess moisture
-1/2 c crumbled feta cheese
-1 Tbsp butter
-1 tsp dried dill
-1/2 tsp salt
-1/4 tsp black pepper
-juice of 1 lemon
In a serving dish, stir together all ingredients, then serve immediately. If you wish to serve later you can pop it in the oven for 10-20 minutes to reheat before serving.
