With minimal ingredients and a super quick prep this fish is easy yet delicious.
-1 Tbsp olive oil
-1/2 tsp salt
-1/4 tsp black pepper
-1/4 tsp oregano
-1/8 tsp red pepper flakes
-1 clove garlic, minced
-1 pint grape tomatoes, sliced in half
-1/4 c kalamata olives, chopped
-4 white fish fillets (halibut, tilapia, cod or sole)
-additional olive oil, salt and pepper for sprinkling
-1/4 c shredded parmesan or crumbled feta cheese
In a bowl, stir together olive oil, salt, pepper, oregano, red pepper flakes, garlic and grape tomatoes. Spread tomato mixture onto a greased baking sheet and bake at 400 for 20 minutes. Add olives and stir into the tomatoes. Place fish fillets on top of tomatoes. Drizzle each piece of fish with a splash of olive oil and some salt and pepper. Top fish with the cheese. Bake (at 400_ for 12-15 minutes) until fish is cooked and flakes easily with a fork.
