This is one of Jeremy’s favorite dinners and is my favorite way to use up extra chicken we have on hand. Sometimes I add caramelized onions, chopped jalapenos or diced pineapple to the quesadillas if I want to add an extra touch.
To make these #dinnerdoneby9am I mix up the filling in the morning, refrigerate it all day, then assemble and cook the quesadillas just prior to dinner.
-tortillas
-2 c cooked chicken, shredded
-1/2 c BBQ sauce
-1 c shredded cheddar cheese
-1/2 bunch cilantro, chopped
In a medium bowl, mix together the chicken, BBQ sauce, cheese and cilantro. Build the quesadillas by placing one on a plate, spreading a thin layer of filling on top, then topping with an additional tortilla. Repeat until all the filling has been used. Heat a pan over medium heat. Spray both sides of each quesadilla with cooking spray. Cook each quesadilla, flipping after it has browned on the first side- about 4 minutes per side.
