I can’t claim this recipe as my own, it’s basically the generic recipe on the back of any vegetable soup mix packet, although I do reduce the mayo and sour cream and increase the spinach. Serve with your favorite crackers.
-3/4 cup mayo
-3/4 cup sour cream
-1 can water chestnuts, chopped
-1 envelope dry vegetable soup mix
-1 (16 oz) bag frozen spinach, thawed and squeezed to eliminate extra water
In medium bowl, whisk together mayo, sour cream, and vegetable soup mix. Stir in water chestnuts and spinach. Chill for 2 hours prior to serving.
