These are so easy to whip up and we love to have them on hand for snacking or layering on top of a main dish. I particularly like to serve them on Asian foods like Lettuce Wraps, Sesame Beef or Korean Beef. They would even be great on a burger of Banh Mi sandwich.
These are easily made #dinnerdoneby9am by preparing in the morning, refrigerating all day, then serving at dinnertime.
-1/2 c white vinegar
-1.5 Tbsp sugar
-1/2 tsp salt
-(optional) 1/8 tsp red pepper flakes
-2 small cucumbers, thinly sliced
-4 radishes, thinly sliced
In a small bowl, whisk together the vinegar, sugar, salt and red pepper flakes (if using). Add cucumbers and radishes, stirring to mix. Refrigerate for at least 30 minutes, or up to all day prior to serving.
