This is a festive salad for all of the winter holidays or dinners.

Salad
-1 lb brussels sprouts, shredded
-1/2 c pomegranate seeds
-1 green apple, sliced
-1/2 c walnuts or pecans
-1/4 c sugar

Dressing
-1/4 c olive oil
-1/4 c cider vinegar
-juice of 1/2 lemon
-2 Tbsp honey
-1 Tbsp dijon mustard
-1/2 tsp salt
-1/4 tsp pepper

Place nuts and sugar in a pan over medium heat. Cook, stirring often, until sugar melts and nuts are toasted. Let cool.

In a blender or food processor combine dressing ingredients and mix well.

Place shredded brussels, pomegranate seeds, apple and candied nuts in a bowl. Add dressing, a few tablespoons at a time, toss until desired coating is achieved.
