I like to make this soup with leftover ham after the winter holidays. I’ve also made it without the meat and it is great either way.
To make this #dinnerdoneby9am I fully prepare the soup in the morning, refrigerate all day, then reheat prior to serving.
-2 Tbsp olive oil
-1 lb dried black eyed peas, rinsed, soaked and cooked according to directions on bag (or 6 cans black eyed peas, drained and rinsed)
-1 medium onion, diced
-several cloves of garlic, minced
-1 (14 oz) can diced tomatoes with chiles
-1 (14 oz can) diced tomatoes
-1 teaspoon salt
-1/4 teaspoon pepper
-3-4 cups chicken or vegetable broth
-(optional) 2 c ham, diced
Heat oil in a large pot, over medium heat. Add onion, saute 5 minutes. Add garlic, saute an additional minute. Add remaining ingredients, simmer at least 20 minutes prior to serving.
