To make this #dinnerdoneby9am I fully cook and assemble the dish in the morning, refrigerate all day and reheat just prior to serving.
-1 Tbsp olive oil
-1 onion, diced
-1/2 green pepper, diced
-1 (15 oz) can diced tomatoes
-1/2 Tbsp sugar
-1/2 tsp thyme
-1 tsp salt
-1/2 tsp pepper
-1-2 Tbsp hot sauce
-4 cups corn kernels (fresh, frozen or canned)
Heat olive oil over medium-high heat in a skillet. Saute green pepper and onion until starting to soften. Add tomatoes through corn, stir well, reduce heat and simmer 5-10 minutes until flavors combine. Serve warm.
