These are the perfect little snack for when a sweet craving hits. They are gluten-free, dairy-free, vegan and naturally sweetened and yet satisfy my desire for something sweet without the guilt. They also take only about 15 minutes to put together and are made from pantry ingredients I always keep on hand. These will keep for up to 2 weeks in the fridge, so you can make a double batch to keep on hand for the week.
-1 c dates
-1 c rolled oats
-1/4 c chopped pecans
-1/4 c pumpkin
-1 Tbsp maple syrup
-1 Tbsp ground flax or chia seeds
-1 tsp vanilla
-1/2 tsp cinnamon
-1/4 tsp ginger
-1/8 tsp cloves
-1/8 tsp nutmeg
-1/8 tsp salt
-(optional) 1/4 c mini chocolate chips
Place dates in food processor and process until finely chopped, about 1 minute. Add remaining ingredients except chocolate chips to food processor. Process 1 minute, stopping and scraping at 20 second intervals. If desired, stir in chocolate chips. Roll batter into balls and refrigerate at least 30 minutes prior to serving.
