This is one of my top favorite salads. I serve it as a light lunch, or as a dinner side dish for a meat or pasta entree.
To make this #dinnerdoneby9am I place the salad ingredients in a bowl except for the apple, make the dressing, refrigerate everything all day, then toss the salad with the dressing just before serving, adding the apple then.
Salad
-8 oz baby spinach
-1/2 c chopped walnuts or pecans
-1/2 c dried cranberries
-1/2 c shaved parmesan cheese
-1 red apple, diced
Maple Balsamic Vinaigrette
-2 Tbsp maple syrup
-1 Tbsp Dijon mustard
-1/4 cup balsamic vinegar
-1/2 cup olive oil
-1/2 tsp salt
-1/4 tsp black pepper
Combine dressing ingredients in a blender, food processor, or by whisking vigorously.
Place the salad ingredients in a bowl. Pour dressing over salad, a few tablespoons at a time, until the salad is coated according to your taste.
