This salad was inspired by a salad that I love at a local cheese shop. My husband doesn’t like artichokes so he eats this without them. I love this as a light lunch or dinner, or accompaniment to my favorite Italian meal.

To make this #dinnerdoneby9am I place all of the salad ingredients in a bowl in the morning and make the dressing. Then refrigerate both all day, and toss the salad with dressing just before serving.

Salad
-1 bag or package arugula
-1 cup grape tomatoes
-1/2 cucumber, sliced
-1/2 c shaved Parmesan cheese
-1/2 (15 oz) can quartered artichoke hearts
-sliced salami or pepperoni

Balsamic Vinaigrette
-1/2 c olive oil
-1/4 c balsamic vinegar
-1 Tbsp Dijon mustard
-2 Tbsp sugar or honey
-1/2 tsp salt
-1/4 tsp pepper
-1/2 tsp dried basil or oregano

Place salad ingredients in a bowl. Whisk together dressing ingredients and toss desired amount of dressing with salad just before serving.
