This is an easy, refreshing, and healthy side dish. Garnish this with a sprinkle of sesame seeds, if desired.

To make this #dinnerdoneby9am I fully assemble the salad in the morning, refrigerate all day and remove from the fridge just before serving.

-2 english cucumbers, sliced
-4 scallions, sliced
-1 cup rice wine vinegar
-2 tsp sesame oil
-1 Tbsp soy sauce
-3 Tbsp sugar
-1/4 teaspoon red pepper flakes

Whisk together vinegar, sesame oil, soy sauce, sugar and red pepper flakes in a medium bowl. Stir in cucumbers and scallions. Chill at least 2 hours or up to overnight before serving.
