This is such an easy and fun dinner. Unusual dinners like this always seem to make normal days feel extra special as we linger around the table continuing to chat and graze. You can use any cheese your prefer instead of the cheddar, I particularly like gouda and swiss also.
-3 Tbsp butter
-3 Tbsp flour
-3 c milk
-4 c cheddar cheese, shredded
-1/2 tsp salt
-1/2 tsp pepper
-2 Tbsp Dijon mustard
-Assorted dippers (we like apples, soft pretzels, roasted broccoli and sausage)
Melt butter in large pot, over medium-low heat. Add flour, cook 2 minutes, stirring constantly. Whisk in milk, cook 5 minutes, stirring constantly. Add dijon mustard, the cheese, salt and pepper. Stir until cheese melts. At this point you can pour the cheese in a bowl and serve immediately, or place it in a small crockpot or fondue pot to keep it warm while you eat.
