This paired nicely with Curried Fish I made. The crunchiness of the cabbage pairs nicely with a delicate fish. To save time and effort, you can use 2 bags of shredded cole slaw mix in place of the fresh cabbage and carrot.

To make this #dinnerdoneby9am I fully prepare the Cole Slaw in the morning, refrigerate all day, then serve at dinner time.

-1/2 cup mayonnaise or yogurt
-1 tsp salt
-1/2 teaspoon black pepper
-2 tablespoons curry powder
-2 tablespoons sugar or honey
-2 tablespoons white vinegar
-2 tablespoons lemon juice
-1/2 small head green cabbage, shredded
-1/2 small head red cabbage, shredded
-4 green onions, thinly sliced
-2 carrots, shredded
-1/2 bunch cilantro, chopped

In a medium bowl, whisk together mayo through lemon juice. Add remaining ingredients and stir well. Chill at least 1 hour prior to serving.
