I served this fish with some Curried Cole Slaw for a quick and easy weeknight dinner that took less than 30 minutes total to prepare. I love the pairing of white fish with yellow curry.

-1 lb mild white fish such as tilapia, cod or halibut
-1 Tbsp olive oil
-salt
-curry powder
-cayenne pepper
-lemon wedges and/ or fresh cilantro for serving

Brush 1 Tbsp olive oil over the fish. Sprinkle fish with salt, curry and cayenne. (I go heavy on the curry, light on the cayenne and medium on the salt). Bake fish at 400 for 12-20 minutes (depending on thickness of fish), until fish flakes easily with a fork. Serve with lemon wedges and/ or cilantro.
