This galette is a stunning, delicious, yet simple dish to serve for an appetizer, side dish, or vegetarian main dish. The combination of basil, mozzarella, and tomatoes is a match made in taste bud Heaven.
-1 pie crust (homemade or store bought)
-1/4 c pesto sauce (homemade or store bought)
-1/2 c mozzarella cheese
-3 large tomatoes, sliced
-salt and pepper
-1 egg, beaten
-(optional) fresh basil leaves for garnish
Roll out pie crust into a circle about 12 inches in diameter. Spread pesto sauce in the center the circle, leaving a 1 inch gap around the edge of the crust. Lay mozzarella over pesto sauce. Arrange tomato slices over mozzarella. Sprinkle tomatoes with salt and pepper. Wrap outer edge of dough over the tomato slices, pleating every 2-3 inches. Brush top of dough with the beaten egg. Bake at 400 for 30-40 minutes, until the crust is brown. Garnish with fresh basil leaves, if desired, and slice into triangles (like a pizza) and serve.
