This is a quick and easy weeknight dinner. The lemon wedge is NOT optional, you really need a touch of acid to bring everything together.
-1 lb white fish (halibut, cod, tilapia…)
-1/4 c pesto sauce
-1/2 c shredded parmesan cheese
-1 lemon, cut into wedges for squeezing
Place fish on a greased baking sheet. Spread pesto on top of fish. Sprinkle parmesan on top of pesto. Bake at 400 for 12 minutes, then put under the broiler for 2-5 minutes, until the parmesan has just started to turn brown. Serve with lemon wedges for squeezing.
