This slaw is bursting with flavor from savory sesame oil, sweet mandarin oranges and salty soy sauce. It’s great to bring to a potluck or serve with grilled meats. I particularly enjoy it with my Teriyaki Pork Tenderloin.

To make this #dinnerdoneby9am I toast the noodles, almonds and sesame seeds in the morning and store in an airtight container. I then make the dressing and slaw (without adding the noodles, almonds and sesame seeds) and refrigerate all day. Then I toss all the crunchy stuff in and mix it all up right before serving.

Slaw
-1 package (any flavor) ramen noodles, seasoning packet discarded
-1/2 c sliced almonds
-2 Tbsp sesame seeds
-1 (16 oz) bag cole slaw mix
-3 green onions, sliced
-1 (15 oz) can mandarin oranges, juice drained
-(optional) 1 small package of toasted seaweed snack, cut into strips

Dressing
-1/4 c rice vinegar
-2 Tbsp olive oil
-2 Tbsp honey
-1 Tbsp soy sauce
-1 Tbsp sesame oil
-1/4 tsp salt
-1/4 tsp pepper

Break up the ramen noodles into bite-sized pieces and place them on a baking sheet. Add the almonds and spread everything out so it’s in a single layer. Bake at 425 for 5 minutes. Give everything a good stir and add the sesame seeds to the sheet. Bake an additional 1-2 minutes, watching closely so nothing burns. Set everything aside to cool.

In a medium bowl, whisk together dressing ingredients, then add cole slaw mix, green onions and seaweed, giving everything a good toss. Add the cooled noodles, almonds and sesame seeds and toss again. Add the mandarin oranges, toss lightly, then serve.
