This is a classic, healthy, hearty lentil stew. To make this vegetarian, you can leave out the meat and it is still delicious.
To make this #dinnerdoneby9am I fully prepare the stew in the morning, refrigerate all day, then reheat prior to serving.
-2 Tbsp olive oil
-1 lb italian turkey sausage
-1 onion, diced
-2 carrots, diced
-2 cups dry lentils, rinsed
-2/3 cup brown rice
-6 c chicken broth
-2 cups water
-1/2 tsp red pepper flakes
-6 oz baby spinach
Heat oil in medium pot over medium heat. Add turkey sausage, cook, breaking up sausage with a wooden spoon, until it is browned and crumbled. Add carrots and onion and sauté 5 additional minutes. Add red pepper flakes and stir. Stir in rice, broth, lentils and water. Bring to a boil. Reduce heat, cover and simmer for 45 minutes, stirring occasionally. Stir in spinach and cook 5 minutes longer to heat through. Taste and add salt and pepper if needed. Serve.
