This is one of my favorite dinners, it’s easy to put together yet a crowd pleaser that bursts with flavor. The chimichurri sauce is bright and fresh and begs to be spooned on top of everything from roasted potatoes to steamed vegetables.
-1 (1.5-2 lb) flank steak
-1 tsp salt
-1 tsp cumin
-1/2 tsp pepper
-1/2 tsp garlic powder
-3 Tbsp brown sugar or honey
-1/3 c olive oil
-4 cloves garlic, minced
-juice of 1 lime
-2 Tbsp jalapeno or chipotle hot sauce
Stir together salt, cumin, pepper, garlic powder, brown sugar/honey, olive oil, minced garlic, lime juice and hot sauce. Coat steak with mixture and allow to marinate for 2-8 hours.
Broil or grill steak for 6-8 minutes on each side. Allow to rest 10 minutes. Slice against the grain in thin slices and serve with the chimichurri sauce.
Chimichurri Sauce
-1 bunch cilantro
-1 bunch parsley
-2 cloves garlic
-1/2 tsp salt
-1/4 tsp pepper
-1/4 tsp red pepper flakes
-1/4 c olive oil
-1/8 c white vinegar
Combine all ingredients in a food processor and mix until well pureed. Chill sauce until serving.
