I like to serve these over mashed white beans for a light lunch, or as a side dish to accompany dinner. You could even serve them with some sliced fresh mozzarella as an appetizer.
-12 roma tomatoes, halved lengthwise
-3 Tbsp olive oil
-2 cloves garlic, minced
-1 tsp sugar
-1 tsp sea salt
-1/2 tsp fresh ground black pepper
-6 basil leaves, sliced into ribbons
-1 c balsamic vinegar
Arrange the tomatoes on a sheet pan, cut sides up, in a single layer. Drizzle with olive oil. Sprinkle the garlic, sugar, salt, and pepper over the tomatoes. Roast at 450 for 25 minutes.
While tomatoes roast, place balsamic vinegar in a small pot over medium heat. Bring to a boil and simmer 5-10 minutes, until it is reduced by half.
Once tomatoes are done, sprinkle the basil over top, drizzle with the balsamic vinegar and serve.
