Authentic Tiramisu would be a little more labor intense, involving making a custard with egg yolks. This version comes together quickly, but still has all the great flavors of the traditional Italian staple dessert.

-1 c heavy cream
-1 c marscapone cheese
-1/3 c sugar
-1 tsp vanilla
-1 Tbsp amaretto
-2 c espresso or strong coffee, at room temperature
-1 pack lady finger cookies

Beat cream, sugar and vanilla at medium high with an electric mixer until stiff peaks form. Fold in marscapone and amaretto.

Dip 1/2 lady fingers in espresso/ coffee and place on the bottom of an 8×8 dish. Top with half the cream mixture, spread evenly. Repeat both layers, then dust the top with cocoa power. Refrigerate for 2-4 hours before serving.
