I lightened up a traditional Cajun Dirty Rice by using Italian Turkey Sausage and then stuffed it inside of a bell pepper to add a little more nutrition and presentation.

To make these #dinnerdonebby9am I fully prepare the peppers in the morning, eliminating the final baking, refrigerate all day, and bake jut before serving.

-3 bell peppers, sliced in half and seeded
-1 Tbsp olive oil
-1 lb Italian turkey sausage
-2 stalks celery, diced
-4 scallions, sliced
-4 cloves garlic
-2 c cooked white rice
-1 Tbsp dried parsley
-1/2 tsp pepper
-1 tsp thyme
-1/4 tsp cayenne
-1 c shredded parmesan cheese

Place peppers cut side down in a greased baking dish. Bake at 400 for 20 minutes.

While peppers bake, Heat oil in a medium pan over medium heat. Add sausage. Cook 10 minutes, or until sausage is cooked through, breaking up with a wooden spoon while cooking. Spoon sausage into a large bowl and return pan to the heat. Cook celery 5-10 minutes, until softened. Add scallions and garlic, cook 1 additional minute, stirring constantly. Spoon celery mixture into the bowl with the sausage and add remaining ingredients (besides the peppers). Stir well.

Once the peppers are done, spoon the stuffing inside. Bake an additional 20 minutes and serve.
