A local restaurant serves a delicious side dish of Thai Sugar Snap peas, but they are also swimming in butter. This is my healthy knock off of their dish.
To make this #dinnerdoneby9am I prepare the sugar snap peas in the morning, slightly undercooking them but adding the sauce. Then I refrigerate all day and re-heat just prior to serving.
-1 Tbsp sesame oil
-1 lb sugar snap peas
-2 Tbsp soy sauce
-2 Tbsp brown sugar
-1/4 tsp red pepper flakes
-1/2 Tbsp sesame seeds
Heat oil in a skillet over medium heat. Add sugar snap peas and cook, stirring often, until sugar snap peas turn bright green (about 5 minutes). In a bowl, combine the soy sauce, brown sugar, sesame oil and red pepper flakes. Pour sauce into the pan with the peas, and cook an additional minute. Turn off heat, sprinkle with sesame seeds, and serve immediately.
