Artichoke hearts, sun-dried tomatoes, and/ or roasted red peppers would all be great in here also.
To make this #dinnerdoneby9am I fully prepare the salad in the morning without tossing with the dressing, refrigerate all day, then toss with dressing before serving.
-1 lb whole wheat rotini, cooked to al dente
-1/2 c feta cheese
-1/4 c kalamata olives
-1 cucumber, diced
-1 c grape tomatoes
-5 oz baby spinach or spring mix
Dressing
-2 cloves garlic, minced
-1/2 c olive oil
-1/2 c red wine vinegar
-juice of 1/2 lemon
-1 tsp dried oregano
-1 tsp dried basil
-1 tsp sugar
-1 tsp salt
-1/2 tsp pepper
-1/4 tsp red pepper flakes
Assemble salad ingredients in a bowl. Whisk together dressing ingredients. Pour dressing over salad, a little at a time, until it is dressed to your preference. Serve.
