Sheet Pan dinners are my favorite dinners for quick and easy weeknight meals and this one did not disappoint! Serve this sheet pan with toasted french bread for making sandwiches or serve the meat, cheese and veggies on a plate with a side of roasted potatoes for a gluten-free meal. I like to buy my beef already sliced from the store to save time so I usually use “stir-fry” sliced beef for this meal.
-4 Tbsp olive oil
-1 tsp salt
-1/2 tsp pepper
-1 lb flank steak, thinly sliced, across the grain
-1 onion, sliced
-1 bell pepper, sliced
-1 pack of sliced mushrooms
-sliced swiss cheese
In a large bowl, stir together oil, salt and pepper. Add sliced beef, onion, bell pepper and mushrooms, stirring to coat. Spread beef and vegetables onto a greased sheet pan and bake at 425 for 20 minutes, stirring halfway through cooking and draining off any excess liquid on the sheet pan. Top the beef and vegetables with slices of swiss cheese, then bake an additional 5 minutes until the cheese is melted and serve immediately.
