This salad was an impromptu throw together of leftover ingredients from our burrito bowls this weekend.  I really enjoyed it and would definitely make it again.  It was a nice variation on a traditional taco salad.  This dressing will make enough for 2 dinner sized salads, or 4 side salads.  The dressing has a lot of ingredients, but they are all things that I always have on hand, so this is an easy one for me to whip up at any time.

Salad
-Spinach or Salad Mix
-chopped tomato
-canned corn, drained
-canned black beans, rinsed and drained
-fresh cilantro leaves
-chopped avocado
-diced red onion
