This is not a healthy casserole, but it is the classic, comforting casserole that graces most holiday tables and tastes like a dessert. Since we only eat this on special occasions we go all out when we do.
-4 cups mashed sweet potatoes
-1 cup sugar
-2 eggs
-½ cup milk
-½ teaspoon salt
-1/3 stick melted butter
-1 teaspoon vanilla
-1/2 tsp cinnamon
Mix all ingredients well and pour into a buttered pan.
Topping:
-1/2 cup brown sugar
-3 Tbsp butter
-1/2 cup pecans
Crumble topping evenly over potato mixture and bake at 350 for 35-45 minutes uncovered. (If desired, add a few handfuls of mini-marshmallows for the last 5 minutes of baking)
