To make this #dinnerdoneby9am I assemble the salad ingredients in a bowl, make the dressing, refrigerate both all day, then toss the salad just before serving.
Salad
-8 oz romaine lettuce or spring mix
-1 cucumber, peeled and diced
-2 roma tomatoes, diced
-1/2 red onion, sliced
-handful of kalamata olives
-a few pepperoncini peppers
-1/2 c cumbled feta cheese
Dressing
-1 clove garlic
-juice of 1/2 lemon
-1/2 c olive oil
-1/4 c red wine vinegar
-1 tsp sugar
-1 tsp dried oregano
-1/2 tsp pepper
-1/2 tsp salt
-1/2 tsp dijon mustard
-1/4 tsp red pepper flakes
Place all salad ingredients in large bowl. Combine dressing ingredients in a blender or food processor and process until smooth. Toss dressing with salad (starting off with a little and adding more until the salad is adequately coated).
