This would be a great side dish for any Mexican meal.
-2 Tbsp olive oil
-2 cups dry brown rice, cooked according to package directions.
-1/2 green pepper, diced
-1 onion, diced
-2 cloves garlic, minced
-1/8 tsp cayenne pepper
-2 tsp salt
-fresh ground black pepper
-1 Tbsp sugar
-6 roma tomatoes, seeded and diced
-1 tsp oregano
Heat oil in large pot over medium high heat. Add green pepper and onion to the pan, cooking until softened, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Add tomatoes, salt, sugar, pepper, oregano and cayenne. Cook until the tomatoes release their juices, about 5 minutes. Stir in rice until well incorporated and serve.
