This is not your ordinary chicken salad. It’s loaded with flavor and texture from ingredients that aren’t normally found in chicken salad. You can serve this on bread or croissants, with crackers, or on a bed of greens. I like to serve it over greens with half a sliced avocado to mix in with it.

To make this #dinnerdoneby9am, I prepare the chicken salad in the morning, refrigerate all day, then pull out of the fridge when I’m ready to serve.

-2 cups cooked chicken, diced or shredded
-1/3 c mayo or yogurt
-2 Tbsp chipotle hot sauce
-juice of 1 lime
-1 tsp salt
-1 tsp smoked paprika
-1 tsp sugar or honey
-1/2 tsp cumin
-1/4 red onion, diced
-1/2 red pepper, diced
-2 Tbsp chopped cilantro
-8 oz canned black beans, rinsed
-8 oz canned corn, drained

Whisk together the mayo/ yogurt, hot sauce, lime juice, salt, smoked paprika, cumin and sugar or honey. Combine with remaining ingredients, mix and serve (or chill until serving).
